How can I perform arithmetic operations between category results? (for example, a subtraction between the total and a category)

You can perform arithmetic operations between category results by first calculating the totals for each category separately. Once you have the totals, you can create a new variable or field that applies the operation you want — for example, Total Score – Category Score.
Depending on the software you’re using for the quiz, this might be done via a formula field, calculated column, or script. If you tell me which tool you’re using, I can give a more specific example run 3
